Ingredients
  

For the lettuce wraps

  • 1 lb ground beef I use 90/10
  • 3 garlic cloves minced
  • 1 red bell pepper diced
  • 0.5 white onion thinly sliced
  • 1-2 carrots julienned
  • Butter lettuce for serving
  • Sliced green onion for serving

For the sauce

  • 0.25 cup soy sauce
  • 0.25 cup brown sugar or coconut sugar
  • 1 teaspoon dark sesame oil
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon red pepper flakes

Instructions

  • Make the sauce. Whisk the sauce ingredients together in a small measuring glass then set aside once done.
  • Cook the filling. Add a splash of olive oil to a large skillet and heat it over medium-high heat. Once hot, add the ground beef and crumble it with a spatula. Cook until the beef is no longer pink and most of the liquid in the pan has evaporated.
  • Add the garlic, onions, bell peppers and carrots. Continue cooking until the vegetables are softened (about 3-4 minutes). Pour the sauce over the ground beef and let simmer for 2-3 minutes or until the sauce thickens slightly.
  • Serve. Spoon the beef mixture into your lettuce leaves and garnish with your desired toppings.
