Ingredients
  

Glaze

  • 0.5 cup dark brown sugar loosely packed
  • 0.5 cup ketchup
  • 1 tablespoon Worcestershire sauce

Meatloaf

  • 1.5 pounds ground sirloin 3-10% fat
  • 0.5 cup milk
  • 2 eggs
  • 1.5 teaspoons kosher salt
  • 0.25 teaspoon ground pepper rounded generously
  • 1 small onion chopped fine
  • 0.25 teaspoon ground ginger rounded generously
  • 0.75 cups finely crushed saltine crackers ~12 crackers
  • chopped fresh rosemary for serving, optional

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Mix the brown sugar, ketchup, and Worcestershire sauce together in a small saucepan or mixing bowl.
  • In a large bowl add ground beef, milk, eggs, salt, pepper, onion, ground ginger, and crushed saltine crackers. Mix together until cohesive.
  • Shape the meat mixture into a loaf that will fit your pan, approximately 9x4 inches.
  • Generously spread the ketchup mixture on the top of the loaf.
  • Bake until the internal temperature reads 160°F, approximately 60 minutes.
  • While the meat cooks, bring the extra sauce to a boil and simmer on low. Drizzle over the meatloaf before serving.

Notes

Consider doubling the sauce for extra flavor and moisture. You can also make mini meatloaves using an Air Fryer.
