Chicken and Filling
- 4 pieces boneless, skinless chicken breasts
- 2 cups baby spinach
- 1 cup drained oil-packed sun-dried tomatoes oil reserved
- 4 slices fresh mozzarella
- 1.5 Tbsp. Italian seasoning
- Kosher salt
- Freshly ground black pepper
Cooking Steps
Preheat oven to 400º. Cut a pocket into the thickest side of chicken breast, stuff with spinach, sun-dried tomatoes, mozzarella, and season with Italian seasoning, salt, and pepper. Secure with toothpicks.
In a large heatproof skillet over medium-high heat, heat reserved tomato oil. Sear chicken until golden brown, about 3 minutes per side.
Transfer skillet to oven and bake until chicken is no longer pink and reaches 165° internally, about 15 minutes.
Remove toothpicks and arrange chicken on a platter. Pour pan juices over.
