Ingredients
  

Chicken and Filling

  • 4 pieces boneless, skinless chicken breasts
  • 2 cups baby spinach
  • 1 cup drained oil-packed sun-dried tomatoes oil reserved
  • 4 slices fresh mozzarella
  • 1.5 Tbsp. Italian seasoning
  • Kosher salt
  • Freshly ground black pepper

Cooking Steps

  • Preheat oven to 400º. Cut a pocket into the thickest side of chicken breast, stuff with spinach, sun-dried tomatoes, mozzarella, and season with Italian seasoning, salt, and pepper. Secure with toothpicks.
  • In a large heatproof skillet over medium-high heat, heat reserved tomato oil. Sear chicken until golden brown, about 3 minutes per side.
  • Transfer skillet to oven and bake until chicken is no longer pink and reaches 165° internally, about 15 minutes.
  • Remove toothpicks and arrange chicken on a platter. Pour pan juices over.
