Chicken
- 1 lb chicken breast boneless, skinless
- 2 tablespoon olive oil
- 3 cloves garlic minced or ½ teaspoon garlic powder
- 1 tablespoon Italian seasoning
- ¼ teaspoon salt
- ½ teaspoon black pepper
Casserole
- 1 tablespoon olive oil
- 2 cups fresh spinach
- 8 oz cream cheese
- ½ cup mozzarella cheese shredded
Preparation
Preheat the oven to 400F.
Place the chicken in a medium mixing bowl and cover with olive oil, garlic, Italian seasoning, salt, and pepper.
Stir it up to cover the chicken.
Place in the refrigerator and marinate while preparing the rest of the casserole.
Meanwhile, prepare the spinach by placing a tablespoon of olive oil in a large skillet over medium heat.
Add the spinach and stir frequently until it has wilted.
Lightly grease an 8×8 glass baking dish and place the chicken in it.
Cover the chicken with the cream cheese.
Place a layer of spinach on top of the cream cheese.
Top everything with shredded mozzarella cheese.
Bake the casserole for about 20-30 minutes, until the chicken is cooked through.
