Ingredients
  

Chicken and Seasoning

  • 2 breasts boneless, skinless chicken (about 1.3 lb. total)
  • teaspoon salt
  • teaspoon pepper

Cooking Ingredients

  • 2 tablespoon olive oil divided
  • 2 cloves garlic minced
  • 1 pint grape tomatoes sliced in half

Sauce Ingredients

  • ½ cup heavy cream
  • ¼ cup pesto

Cooking Instructions

  • Fillet the chicken breasts into two thinner pieces or pound to an even thickness, then cut each into four portions. Season with salt and pepper.
  • Heat a large skillet over medium heat. Add 1 tablespoon olive oil and coat the surface. Add chicken and cook until golden brown and cooked through (about 7-10 minutes total). Remove chicken to a clean plate.
  • Turn heat down to medium-low. Add remaining olive oil, garlic, and tomato halves to the skillet. Sauté for about five minutes until tomatoes soften.
  • Add heavy cream and pesto and stir to combine. Allow the sauce to simmer. Adjust salt and pepper to taste.
  • Add chicken back to the skillet, coating with sauce. Simmer for a few minutes to heat through. Serve hot.

Notes

You can use any type of pesto; basil or red pesto work well. Look for affordable brands like Alessi or Barilla.
