Ingredients
  

Cucumber Mixture

  • ¾ cup English cucumber, partially peeled Striped
  • 1 teaspoon kosher salt divided
  • 4-5 cloves garlic peeled, finely grated or minced
  • 1 teaspoon white vinegar
  • 1 tablespoon Greek Extra Virgin Olive Oil Early Harvest recommended

Yogurt Base

  • 2 cups plain Greek yogurt
  • ¼ teaspoon ground white pepper
  • 1 handful fresh dill or mint chopped, optional

Serving Options

  • to taste warm pita bread for serving
  • to taste sliced vegetables for serving

Instructions
 

Preparation

  • Grate the cucumbers using a box grater or food processor, then toss with ½ teaspoon kosher salt and squeeze dry.
  • In a mixing bowl, combine garlic with remaining ½ teaspoon salt, white vinegar, and olive oil, then mix.
  • Add the grated cucumber to the garlic mixture. Stir in yogurt, a pinch of white or black pepper, and fresh herbs if using.
  • Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  • When ready to serve, stir the tzatziki sauce and drizzle with more olive oil if desired. Serve with veggies or pita.

Notes

This recipe makes 2 cups of sauce and is best stored in a tightly-covered glass container in the fridge for up to 4 days. Adjust garlic quantity based on taste preference.
