Feta Cheese Stuffed Zucchini

Ingredients
  

Vegetables

  • 675 grams zucchinis 3 medium

Cheese & Dairy

  • 150 grams crumbled feta cheese 1 cup + 1 tbsp
  • 90 grams Greek yogurt strained
  • 40 grams grated Gruyere cheese ½ cup

Seasonings

  • 20 grams Spring onion 1 medium
  • 1 whole lemon zest ½
  • ½ teaspoon garlic powder
  • 1 tablespoon finely chopped parsley
  • teaspoon dried oregano

Oils

  • 1 tablespoon olive oil plus a little extra to drizzle on top

Instructions
 

Preparation

  • Preheat oven to 200°C / 390°F.
  • Cut off the tops and bottoms of the zucchinis. Cut a thin long slice to reveal the flesh of the zucchini. Scoop the flesh to create a zucchini boat that’s ½ cm thick all around the sides.
  • In a small bowl, mix together the olive oil and oregano. Brush or rub this mixture all over the insides of the zucchinis, and season lightly with salt and pepper.
  • Bake the zucchinis in a small baking dish or non-stick pan for 12-15 minutes until slightly softened.

Filling

  • In a mixing bowl, combine both types of cheese, Greek yogurt, spring onion, garlic powder, lemon zest, parsley, and remaining olive oil and oregano. Stir well.
  • Remove zucchinis from the oven and let cool for 5 minutes. Reduce oven temperature to 180°C / 356°F.

Stuffing & Baking

  • Stuff the zucchinis with the cheese filling, pressing to fit. Drizzle with a little olive oil and sprinkle with oregano on top.
  • Return to the oven and bake for about 30 minutes, until the cheese filling is set and golden.
  • Serve warm or cold, with extra olive oil on top if desired. Enjoy!

Notes

You can use leftover zucchini flesh in soups, stews, or fillings for Yemista or stuffed squid.
