Ingredients
  

Strawberries + Whipped Cream

  • 6-7 cups quartered strawberries
  • 75 g granulated sugar divided
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy cream

Biscuits

  • 2 and ¾ cups all-purpose flour plus extra for hands and work surface
  • 50 g granulated sugar
  • 4 teaspoons aluminum free baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt I recommend fine sea salt
  • ¾ cup unsalted butter cold and cubed
  • 1 cup cold buttermilk
  • 2 Tablespoons heavy cream or buttermilk
  • coarse sugar for sprinkling

Instructions
 

Preparation

  • Stir the strawberries and ¼ cup granulated sugar together in a large bowl. Cover and set in the refrigerator until ready to use.
  • Preheat oven to 400°F (204°C). Mix the flour, granulated sugar, baking powder, baking soda, and salt in a bowl. Add the cubed butter and cut into the dry ingredients.
  • Pour buttermilk on top. Fold everything together until it begins to come together without overworking the dough. Transfer dough to a floured surface and bring together gently.
  • Flatten dough into a ¾ inch thick rectangle and repeat folding and flattening process.
  • Cut into 2.75 or 3-inch circles and arrange in a cast iron skillet or on a lined baking sheet.
  • Brush the tops with heavy cream or buttermilk and sprinkle with coarse sugar. Bake for 18-22 minutes until golden brown.
  • Using a mixer, beat the heavy cream, 2 Tablespoons of granulated sugar, and vanilla until soft-medium peaks form.
  • Slice the biscuits in half and layer with strawberries and whipped cream. Serve immediately.

Notes

Make ahead: Biscuits can be made up to 3 days ahead and stored at room temperature or frozen for up to 3 months. Strawberries and whipped cream can be made a day in advance and stored in the refrigerator.
