Equipment

  • large skillet
  • pie dish
  • Rolling pin
  • pastry brush
  • Cooling Rack

Ingredients

Pie Crust

  • 1 batch Homemade Pie Crust or All Butter Pie Crust
  • 1 large egg beaten with 1 Tablespoon milk for egg wash
  • 1 Tablespoon coarse sugar for sprinkling on crust (optional)

Filling

  • 10 cups apple slices about 8 large peeled and cored apples, ¼-inch thick
  • ½ cup granulated sugar or packed brown sugar
  • ¼ cup all-purpose flour spooned & leveled
  • 1 Tablespoon lemon juice
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground nutmeg

Instructions

Pie Assembly

  • Prepare either pie crust recipe through step 5. Refrigerate the pie dough for at least 2 hours before using.
  • Roll out one disc of chilled dough to a 12-inch circle, and place it into a 9-inch pie dish. Refrigerate while preparing the filling.
  • Stir apple slices, sugar, flour, lemon juice, cinnamon, allspice, and nutmeg in a large bowl until combined.
  • Optionally pre-cook the filling in a skillet over medium heat for about 5 minutes until apples begin to soften, then cool slightly.
  • Preheat oven to 400°F (204°C). Spoon filling into the crust and pile apples high.
  • Roll the other disc of dough into a 12-inch circle and cut into strips to create a lattice top. Crimp edges to seal.
  • Brush the top of the pie crust with egg wash and sprinkle with coarse sugar. Refrigerate for 20-30 minutes if desired.
  • Bake for 25 minutes, then reduce the temperature to 375°F (190°C). Bake for an additional 35-45 minutes until golden brown and filling is bubbling.
  • Cool pie for at least 3 hours before slicing to allow filling to set.
  • Store leftovers at room temperature for 1 day or in the refrigerator for up to 5 days.

Notes

To make ahead, the pie can be covered and kept at room temperature for 1 day. The crust can be made ahead and stored in the refrigerator for up to 5 days or frozen for 3 months.
