Ingredients
  

Marinade

  • 1 chicken whole
  • 1 lemon juiced
  • ½ cup white wine
  • ½ cup olive oil
  • 3 cloves garlic smashed
  • 1 tablespoon paprika
  • ½ teaspoon black pepper
  • 2 tablespoon piri piri sauce
  • 1 tablespoon fresh parsley chopped
  • salt to taste

Instructions
 

Preparation

  • Combine all the ingredients except the chicken, lemon and salt in a bowl.
  • Spatchcock the chicken by cutting the backbone out, laying it flat and pressing down on the breast.
  • Salt the chicken liberally, place it in a ziplock bag and squeeze lemon juice onto it. Seal and refrigerate for 1 hour.

Cooking

  • Light your grill for indirect heat, aiming for 400F.
  • Drizzle olive oil on the chicken and rub to coat.
  • Place the chicken skin side up on the grill and cook covered for 10 minutes.
  • Baste the chicken with the marinade, then cook for 5 minutes. Repeat this process three times.
  • Flip the chicken, baste again and cook for 15 minutes. Flip again and continue to cook.
  • Cook until the breast reaches 165F on an instant read thermometer.
  • Transfer to a cutting board and let rest for 5 minutes.
  • Cut into serving pieces and serve with juices over the chicken.
