Marinade
- 1 chicken whole
- 1 lemon juiced
- ½ cup white wine
- ½ cup olive oil
- 3 cloves garlic smashed
- 1 tablespoon paprika
- ½ teaspoon black pepper
- 2 tablespoon piri piri sauce
- 1 tablespoon fresh parsley chopped
- salt to taste
Preparation
Combine all the ingredients except the chicken, lemon and salt in a bowl.
Spatchcock the chicken by cutting the backbone out, laying it flat and pressing down on the breast.
Salt the chicken liberally, place it in a ziplock bag and squeeze lemon juice onto it. Seal and refrigerate for 1 hour.
Cooking
Light your grill for indirect heat, aiming for 400F.
Drizzle olive oil on the chicken and rub to coat.
Place the chicken skin side up on the grill and cook covered for 10 minutes.
Baste the chicken with the marinade, then cook for 5 minutes. Repeat this process three times.
Flip the chicken, baste again and cook for 15 minutes. Flip again and continue to cook.
Cook until the breast reaches 165F on an instant read thermometer.
Transfer to a cutting board and let rest for 5 minutes.
Cut into serving pieces and serve with juices over the chicken.
