Ingredients
  

  • 4 pieces pork chops
  • 3 units tomatoes jitomate
  • to taste olive oil
  • 2 cloves garlic
  • 1 unit white onion
  • 2 units guajillo chiles
  • to taste salt
  • to taste pepper

Instructions
 

  • Season the chops with salt and pepper and let them rest in the fridge for 10 minutes.
  • In a pot of boiling water, add the tomatoes, onion, garlic, and chiles (all whole, not chopped).
  • Cook for 10 minutes, then blend the ingredients with some of the cooking water until you get a smooth sauce. Set aside.
  • Heat olive oil in a skillet and sear the chops.
  • Cook for 3 minutes, then pour the red sauce on top.
  • Cover and cook on low heat for 10 minutes.
  • Serve the chops in sauce and enjoy.
