Vietnamese Rice Paper Rolls

Ingredients
  

Rice Paper Rolls

  • 7 - 14 sheets 22cm/8.5" round rice paper Use 2 per roll for easier handling.
  • 11 small cooked prawns/shrimp Unpeeled including the head.
  • 50 g dried vermicelli noodles Soak in warm water.
  • 7 leaves lettuce Use soft leaves like Oak or Butter Lettuce.
  • 14 leaves mint leaves
  • 1 cup bean sprouts

Vietnamese Peanut Dipping Sauce

  • 1 tablespoon peanut butter Preferably smooth.
  • 2 tablespoon Hoisin Sauce
  • 1.5 tablespoon white vinegar Or lime juice.
  • cup milk Any fat %, or water.
  • 1 clove garlic Minced.
  • ½ teaspoon crushed chilli Optional.

Instructions
 

Peanut Sauce Preparation

  • Combine the Peanut Dipping Sauce ingredients. Mix briefly, then microwave for 30 seconds. Mix again until smooth. Set aside to cool.
  • Adjust sourness with vinegar and salt, and spiciness to taste.

Rice Paper Rolls Preparation

  • Place vermicelli noodles in a bowl and cover with warm water for 2 minutes, then drain.
  • Peel the prawns, slice in half lengthwise and devein.
  • Remove the crunchy core of the lettuce leaves.
  • Place some vermicelli noodles and bean sprouts in a lettuce leaf, then roll it up.
  • Fill a large bowl with warm water. Submerge the rice papers for 2 seconds.
  • Place the rice papers on a board with the smooth side down.
  • On the top part of the rice paper, place 3 prawns with a mint leaf in between.
  • Place the lettuce bundle with the seam side down onto the middle of the rice paper.
  • Fold the left and right edges of the rice paper in, then roll up to cover the lettuce bundle.
  • Serve immediately with the peanut dipping sauce.

Notes

Peanut free sauce alternative: sweet chilli sauce. These rolls are best eaten fresh, ideally within 6-8 hours of preparation.
